My Favorite Open Faced Sandwich

This recipe idea came to me all because of one ingredient – my favorite chipotle lime mayo. It’s by the brand Primal Kitchen and oh my is it delicious. You can get this at Whole Foods, Kroger, Target, etc. It’s approximately $8 for a jar, which is steep for a mayo, but I’m telling you…it’s worth it.

All you need is:

  • bread (whole grain preferably)
  • chipotle lime mayo
  • arugula
  • 1-2 eggs
  • seasoning (salt, pepper, crushed red pepper, etc.)

Start by toasting the bread to your preference. I like my bread to have a nice golden color.
Wait for the bread to cool down a little and then spread on a generous amount of the chipotle lime mayo.
Add a handful (or more!) of arugula on top.
Next, fry an egg. I like mine either sunny side up (as pictured) or over easy. The key is to have the yolk nice and runny so that it combines with the other ingredients.
Carefully place the egg on top of the arugula and season with salt, pepper, and crushed red pepper for a nice kick!

I love making this for a quick meal because it’s pretty healthy and doesn’t require a million ingredients. If I want to have this for lunch, I’ll make 2. If I want something to accompany a soup or salad, I’ll make 1.

The great thing about this is that you can be as versatile as you want with the ingredients and I can almost guarantee you this will taste good. I hope you guys try making this or add your own spin to it, and if you do, please let me know so I can try it myself!
